If you’re looking for more than rice pure and simple, the following
is a good and easy recipe which can be made with white or brown rice. Versatility, the key to success.
Rice Casserole There’s a catchy title for you.
Preheat oven to 350°

*1 cup long grain white rice
à
1 10½ oz. can
condensed French onion soup
à
1 10½ oz. can
condensed beef or chicken broth, depending on what you plan to serve it with
à
4 Tb (½ stick) butter, the original recipe called for 1 stick
of butter so you can use up to that much if you prefer. I like it this way and feel so much more virtuous using less fat.
à
1 4 oz. can mushroom
buttons, well drained
In a 1-quart baking dish melt
the butter in the oven. Keep your eye on it so it doesn’t start to brown. Remember, brown is one short step from black.
When melted, in the casserole
dish stir together all of the ingredients.
Bake, uncovered in a 350° oven for 1 hour, stirring half way through.
*This recipe may be made with
brown rice. If you choose to do that then add ½ cup water and increase the cooking time to 1½ hours.
